Cauliflower Crust Pizza
small head of cauliflower
low fat mozzarella cheese
Pulse cauliflower in a food processor until you have very small pieces
Place cauliflower in microwave to cook
Once cooked, cool completely, and place in a clean dishtowel then ring out all the moisture. This will make the base crispy!
Once dry, place back in the bowl with herbs, garlic and whole egg and mix.
Flatten out the dough to about 1/2cm to 1cm thick.
Place the dough on a baking tray with baking paper, and cook until golden brown on 400 degrees
Once cooked add tomato base and toppings.
Great healthy toppings include spinach, zucchini and asparagus
